I made this Valentine’s Snack Crak last year for a Mahjong party that I threw for my birthday!! I still need to write that blog post because it was so much fun and would be a great party to throw just for Valentine’s Day this year if you want to get your Mahjong crew together. Anyway, this tasty little snack recipe is fun to make for a party or just to do with your kids this year as a holiday treat. You can play around with the ingredients, but I found most of mine at Target in their Valentine’s section of snacks.

XOXO SNACK CRAK RECIPE

4 cups Chocolate Chex cereal
2 cups Very Berry Cheerios
2 cups X & O-shaped pretzels (found at Target)
White Chocolate candy for melting
Valentine’s nonpareil sprinkle mix
Valentine’s heart sprinkle mix
1 cup Cupid’s Blend M&M’s
1 cup Valentine’s Peanut M&M’s
1 cup Very Berry Cheerios
1 cup Chocolate Chex
1 cup X & O-shaped pretzels
2 cups X & O-shaped frosted cookies (found at Target)

In a large bowl, combine 4 cups Chocolate Chex cereal, 2 cups Very Berry Cheerios, and 2 cups X & O-shaped pretzels.

In a microwave-safe bowl, melt the candy coating according to package directions.

Pour the melted candy coating over the ingredients in the large bowl and toss to coat with a large spoon. Ingredients should be evenly coated in the candy coating.

Spread the mixture out in an even layer on parchment paper. Immediately sprinkle with Valentine’s nonpareil sprinkle mix and the Valentine’s heart sprinkle mix.

Top the mix with 1 cup Cupid’s Blend M&M’s, 1 cup Valentine’s Peanut M&M’s, 1 cup Very Berry Cheerios, 1 cup Chocolate Chex, 1 cup X & O-shaped pretzels, and 2 cups X & O-shaped frosted cookies.

Allow mixture to cool completely. Break apart to serve. Store in an airtight container or baggie.

You can obviously make any variation of this mix with whatever of the above ingredients that you want or have on hand. You can add peanuts, use pink candy melts instead or add whatever your little Valentine’s heart desires. It turned out really cute and is tasty for a crowd.

This easy pineapple upside down cake which was way more delicious and exciting to make than I ever imagined. I had never made one before and I had a whole pineapple that was sitting on my counter for over a week that needed to get eaten. I was chatting with a friend and she talking about a pineapple upside down cake that her daughter had made and they loved it so much, they made it again a few days later.

So I was excited to try out this recipe that was really simple and to be able to use up my pineapple. You most definitely can just buy canned pineapple slices if you don’t want to mess with cutting your own pineapple and I hear it is just as delicious

Easy Pineapple Upside Down Cake

Ingredients:

Yellow Cake Mix ( make cake mix according to directions)

1 large pineapple cut into slices (or use a can of sliced pineapples for quick and easy alternative)

Marashino cherries

1/2 C unsalted butter, melted (one stick)

1 C light brown sugar

In your Cast Iron Skillet..

Melt your stick of butter in a cast iron skillet. Add 1 C light brown sugar and spread it evenly throughout the bottom of the pan.

Place pineapple rings evenly throughout the pan to cover.

Place a cherry in each ring.

Prepare the Cake Mix
Follow the directions on the yellow cake mix that you purchase. For this box, I whisked the following in a medium bowl:

Cake Mix

Water

Eggs

Vegetable Oil

Instructions

Pour the cake mix in the pan.
Cook the cake for 40 -45min or until fully cooked.
Remove the pan from the grill. Run a butter knife around the edge of the cake to help separate it from the pan.
Place a board or plate on top of the cake. Flip the cake to create an upside down cake.
Let the pan sit on top of the cake for 5 minutes or so while all the good brown sugar and butter soaks into the cake.
Remove pan and admire your beautiful creation.

My grandmother used to make this Hello Dollies recipe and I honestly had forgotten all about it until Matt mentioned them the other day. I love them with the butterscotch chips. They are so rich and delicious with the coconut flakes. I highly recommend this little treat!

Hello Dollies Recipe

Ingredients

1/2 stick of butter, melted in pan
1 cup graham cracker crumbs
1 (6oz) package butterscotch chips (you can also use chocolate chips)
1 (3.5oz) Bakers Angel Flake Coconut
1 cup chopped pecans
1 can sweetened condensed milk

Directions

Put all ingredients in 8×8 pan in order of recipe. Pour milk over top. Bake at 350 degree for 30 minutes. Let cool for about 10 minutes and then cut into small squares.

The girls and I had some fun this weekend making some festive Valentine’s Day cookies! They are fluffy because they are made with cake mix and a little bit of cream cheese. We used pink food dye to to make them bright pink but I think you could also use a strawberry cake mix and that would yummy too.

We had these peppermint kisses leftover from Christmas that we used, but I think a white chocolate kiss would be best! The girls are wearing the cutest Valentine’s dresses c/o Little English. I love their cotton dresses. They are cute, comfortable and they wash really well. You can shop them here.

We love these mummy Oreo balls because they kind of remind me of a cake pop. The they are rich and delicious! I’ll be honest though, the “mummy-look” takes a little practice. Ours didn’t turn out perfect, but that was the fun of it! The kids loved them no matter what!

Ingredients

1 (16 ounce) package OREO Chocolate Sandwich Cookies

1 (8 ounce) package Cream Cheese, softened (not low fat)

16 ounces of white chocolate candy melts (or vanilla almond bark)

mini chocolate chips, for the eyes

Directions

Crush Oreos in a food processor (or use a rolling pin).

Add softened cream cheese; process/mix until well blended.

Roll cookie mixture into about 42 balls, about 1-inch in diameter.

Refrigerate balls for about one hour to firm them.

Melt white chocolate in the microwave or double broiler (only do 15-30 seconds at a time if using the microwave so as not to scorch it, stirring each time you take the bowl out).

Dip balls in melted white chocolate using a spoon or two forks to coat thoroughly; place on wax paper-covered baking sheet. Drizzle extra white chocolate to get the “mummy” wrap look (can use a piping bag for this or just a fork or spoon) and place mini chocolate chips for the eyes while the chocolate is still wet so that they stick.

Refrigerate until firm, about 1 hour.

Store leftover truffles, covered, in refrigerator.

I made these cookies last week for the kids and I thought they were yummy! I probably liked them a little more than the kids did but it’s because I love all desserts that are made with peanut butter!!! You will notice the recipe doesn’t call for any flour. Instead it is just made with peanut butter, sugar, oats and a few other ingredients which make the cookies a little more dense and a little less fluffy, if you will. We just happened to have all the ingredients for these cookies at the house when I stumbled upon the recipe, so I had to try them! I hope you enjoy.

INGREDIENTS:

1 cup natural peanut butter (just peanuts and salt)

2 tablespoons melted unsalted butter

2/3 cup coconut sugar

1 teaspoon vanilla extract

2 large eggs

3/4 cup old fashioned oats

1 teaspoon baking soda

1/4 cup dark chocolate chips

1/4 cup M&M’s

Flaky sea salt for sprinkling on top

HOW TO COOK HEALTHY MONSTER COOKIES

Preheat oven to 350°F and line a baking sheet with parchment paper.

In a mixing bowl, mix together the peanut butter, melted butter, coconut sugar, vanilla and eggs. Add in the oats, baking soda, chocolate chips and M&M’s and stir to combine.

Use a large ice cream scoop to scoop the dough into balls and place on the baking sheet 3 inches apart (these cookies spread quite a bit). Gently press the cookies down to flatten if you want thinner cookies. Place a few extra chocolate chips and M&M’s on top of the cookies and sprinkle with sea salt. Bake for 8-10 minutes or until the edges are slightly brown. They may look slightly underdone but they will continue to bake one they’re removed from the oven. Let them sit for 5 minutes before transferring to a wire rack to cool completely.
