Summer Squash and Zucchini Casserole

Since we are entering into Spring and Summer, I wanted to share this side dish with you guys that I have made 3 or 4 times now and every time it is sooo delicious!!  I love an option that I can make ahead of time, especially if we are having guest, and this one is perfect for that.  We have made this for guests and we will just throw some steaks on the grill and have a nice salad and call it a night and it makes a delicious meal!

Summer Squash and Zucchini Casserole

Ingredients

2 lbs squash and zucchini, chopped
1 small onion, chopped
1 cup mayo
2 tbsp sour cream
1 cup Gruyere cheese
1/2 cup Parmesan cheese
2 eggs, beaten
1/2 tsp salt
1/4 tsp pepper

Topping:

1 cup Ritz crackers, crushed
2 tbsp butter

Directions

Mix all ingredients together and pour into greased casserole dish. Mix Ritz crackers and melted butter, and pour over the casserole. Bake at 350 degrees, 35-45 minutes until the top is browned.
