Taste of Tuesday | Crockpot Chicken Parmesan

It makes me smile when I get to share a superbly easy meal with you guys that is so delicious.  Have I mentioned before how much I love the dang crockpot?? Whoever invented that thing is genius.   Not only does it make life easy, but it makes meats so tender!  Anyway, I was in a crunch and didn’t feel like really “cooking” and came across this dish.  


Crockpot Chicken Parmesan

INGREDIENTS
2-4 boneless, skinless chicken breasts
½ cup Italian Seasoned Bread Crumbs
¼ cup Parmesan Cheese
¼ teaspoon black pepper
¼ teaspoon kosher salt
1 Tablespoon olive oil
1 egg, beaten
sliced or shredded mozzarella cheese (I used fresh mozzarella sliced)
favorite jarred marinara sauce
INSTRUCTIONS
Spread the 1 tablespoon of olive oil into the bottom of your crockpot.
In a small bowl, whisk the egg until beaten.
Mix the bread crumbs, Parmesan cheese, pepper and salt together in a medium bowl.
Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with egg and bread crumb mixture.
Place the chicken breast pieces in the bottom of the crockpot.
Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like.
Cover chicken and cheese with entire jar of marinara sauce.
Close lid and cook on low for about 5 hours or until chicken is done. Or on high for 3 hours.
Serve with your favorite pasta.

  3. One of my husbands favorite meals is Chicken Parmesan and now that you have shared a crock pot recipe, maybe I can make it for him more often! I hate doing all the work it takes to get one done in the oven and I feel the chicken is usually dry in the oven!

  4. I love my crockpot and really should use it more! I don't eat meat but wonder if I could try this with eggplant, looks so yummy and easy!
